- **DAVID9S CHILI-CON-CARNE RECIPE**
- (I've been perfecting it for 30 years now... :-)

- Fresh goods:
-
- 3 lbs Lean Ground Beef (or 1/2 inch cubed chuck)
- 2 lbs white cooking onions (1/2 inch dice)
- 1 bunch celery (10 or 12 ribs) (1/4 inch dice) including leaves.
- 3 to 6 cloves garlic, minced
- 2 x 14 oz cans crushed tomatoes, (condensed)
- 2 x 28 oz cans dark red kidney beans
- 1 x 14 oz can refried beans
- 3 or 4 fresh tomatoes, (1/2 inch dice)

- Spices:

- Chili Powder 4 TBSP
- Salt 1 TBSP
- Pepper, Black 1 TBSP
- Pepper, Red (cayenne) 1/2 tsp
- Allspice 2 tsp
- Cinnamon 3/4 tsp
- Basil 4 TBSP
- Cumin 3 TBSP
- Coriander
- Chocolate, SemiSweet 1 Square (4 sugarcube sized pieces)
- (Optional.....Authentic PreColumbian/Aztec
- cooking uses chocolate with tomatoes
- ... sounds strange, but tastes quite good)
- Cillantro 1 TBSP (dried leaves) **OR** ( 1/2 cup fresh chopped)
- Oregano 4 TBSP
- Mustard, dry powder 4 tsp
- Brown Sugar 4 TBSP
- Vinegar 2 TBSP
- Lemon juice of one, plus the shredded yellow 3zest2
- Soya Sauce 4 TBSP
- Beer 1/2 bottle, drink other half.....continue drinking while chili
- cooks... :-)

- Method:

- Chop up all ingredients as indicated on the list.
- Heat up a large heavy pot (pressure cooker is ideal---about 6 liters size,
- or larger.
- Saute ground beef, till all grey and starting to brown,
- Add chopped onions & celery, and 3sweat2 (stirfry) for about 10 minutes,
- till all 3glossy2 and semi-transparent.
- Add the rest of the ingredients, and spices, stirring *gently * (don9t
- 3mash2 the kidney beans)
- Bring up to a boil, stirring frequently (don9t 3scorch2 the bottom of the pan)
- Lower heat to a simmer, stir every 10 minutes or so, for at least TWO HOURS
- (Crock pot, or into large casserole, covered, then overnite in the oven at
- 275 0F is IDEAL)

- Serve with green salad, cold beer, and over rice, +/or with garlic toast.
